Fried Green Tomatoes

We had a couple unripened/still green tomatoes fall off their vine in our garden out back – the tragedy!  So what do you do with green tomatoes?

Fry them up of course!  We thought this recipe was great, the cornmeal added a nice crunch.

Fried Green Tomatoes

3 medium, firm green tomatoes
Salt
1 cup all-purpose flour
1 Tbsp Cajun seasoning (optional)
1/2 cup milk or buttermilk
1 egg
1/3 cup cornmeal
1/2 cup fine dry bread crumbs
1/4 cup peanut oil or other vegetable oil

Cut unpeeled tomatoes into 1/2 inch slices. Sprinkle slices with salt. Let tomato slices stand for 5 minutes. Meanwhile, place in separate shallow bowls: the flour and Cajun seasoning (if using), buttermilk and egg, and bread crumbs and cornmeal.

Heat the peanut oil in a skillet on medium heat. Beat the egg and the buttermilk together. Dip tomato slices in the flour-seasoning mix, then buttermilk-egg mixture, then the cornmeal-bread crumb mix. In the skillet, fry half of the coated tomato slices at a time, for 3-5 minutes on each side or until brown. Set the cooked tomatoes on paper towels to drain. Serve warm with a remoulade.

Couple Things…

 What are you up to this weekend?  I am so excited for a Girls Night Out I have planned for tonight with my college friends…don’t wait up!

We’re leaving husbands, kids, and babies at home and spending the night in Newport for some fun – if the weather stays warm, I think I’ll wear one last summery outfit for an evening on the town…

Gimme a Beet

Don’t  you just love beets?  We are big fans in our house.  We got beets in our weekly CSA a couple weeks ago and after some research, we realized that steaming beets is the way to go (we always assumed you boiled them!).  So, I thought I would share the process with you because if you ever thought it was daunting to prepare beets from scratch – it is not!  According to www.healthy-beets.com:

Wash the beets gently and place them in the inner pan (or basket) of the steamer arranging the beets in a single layer.  Add 2 inches of water to the steamer and bring to boil.  Place the basket in the steamer pot and steam at a rolling boil until the beets are tender.  Always cover the pot when steaming vegetables, and check the water level periodically.It will take about 35-50 minutes to steam two pounds of fresh beets depending on their size. The beets are done when they can be easily pierced to their center with a sharp knife.

Plunge the beets in cold water, and peel when they are cool enough to handle, but still warm. Then, the skins will slip easily.

And of course, freshly steamed beets mixed with lettuce and delicious goat cheese is salad perfection…

Peter Pan Collar Iron On

I mentioned last week that I was going to make iron-on Peter Pan Collar shirts – well, I made the one for our baby girl and it came out SO cute!  I saw in my September issue of Martha Stewart Living that she has great download-able patterns to print and make your own tees (and bags and jewelry as well), including one for a Peter Pan Collar shirt.  It was such an easy, fun project – here is where you can print the clip art to make your own.

I used this iron transfer paper that I bought at Michael’s and then a long sleeve white tee for our baby’s shirt.  I followed the directions for the paper and voila – done!  Once the pattern was ironed on, I thought something was missing so I added little buttons for a pop of color and 3D effect.  It came out great…

Note: I was going to make one for myself too, but I ordered the t-shirts online and when mine arrived it had a little stain, boo, project delayed.

Monday Outfit

Happy Labor Day!  I am wearing all black today in mourning of the end of summer – I know technically we have a few weeks until the calendar says summer is over, but we all  know Labor Day is really it.

I am wearing my favorite old J.Crew shorts with a black tank, similar to the ones below.  I’m still summery with my Essie “Clambake” nails though, don’t worry…

Easy Cole Slaw

Cole slaw is one of those yummy, summertime side dishes you get when you’re at a restaurant with fish and chips, a lobster roll, or maybe even some fried clams.  But, you never make it at home, right?  Well now that can change because I found the easiest recipe with ingredients you probably already have, you’ll just have to go out for the cabbage.  I thought I would share this now (in place of my usual “Couple Things” Friday post)  – just in time to make for your Labor Day cookout.

Basic Cole Slaw

6 cups shredded cabbage
2 carrots, shredded
2/3 C mayonnaise
2 Tbs apple cider vinegar
2 Tbs vegetable oil
2 Tbs sugar, or to taste
1/2 Tsp celery seeds
s&p to taste

In a bowl, whisk together the remaining ingredients. Pour the mixture over the cabbage and carrots and toss to coat thoroughly. Refrigerate until serving time.

I am getting very excited that someone is turning ONE exactly 2 months from today.  We have decided to throw a small, low-key celebration with family – but that doesn’t mean I haven’t started thinking about every last detail!

All I’ll say for now is that sock monkeys will be playing an important role in the theme of the day but I did want to share some other things I have found that have inspired other details…

Sangria

Don’t you just love a cold glass of Sangria in the summertime?  I made some the other night to bring to a friends house and realized I had never shared my “recipe” before.  So here you go – just in time to make for Labor Day Weekend!

1 bottle of Spanish red wine (literally go to the “Spanish Wine” aisle at your liquor store and find a bottle of red for like $8 or $10)
1 lemon cut into 1″ rounds
1 orange cut into 1″ rounds
1/2 a green apple cut into 1/2 inch pieces
2 Tbsp sugar
1 Shot brandy
2 C club soda

Pour wine in a pitcher and squeeze the juice from the lemon and orange into the wine. Toss in the fruit wedges and the apple pieces, then add sugar and brandy. Chill overnight (the longer you chill, the yummier). Add club soda just before serving.
