Easy Cole Slaw

cole slaw

Cole slaw is one of those yummy, summertime side dishes you get when you’re at a restaurant with fish and chips, a lobster roll, or maybe even some fried clams.  But, you never make it at home, right?  Well now that can change because I found the easiest recipe with ingredients you probably already have, you’ll just have to go out for the cabbage.  I thought I would share this now (in place of my usual “Couple Things” Friday post)  – just in time to make for your Labor Day cookout.

Basic Cole Slaw
from Southern Food (but heavily edited)

6 cups shredded cabbage
2 carrots, shredded
2/3 C mayonnaise
2 Tbs apple cider vinegar
2 Tbs vegetable oil
2 Tbs sugar, or to taste
1/2 Tsp celery seeds
s&p to taste

/* Style Definitions */ table.MsoNormalTable {mso-style-name:”Table Normal”; mso-tstyle-rowband-size:0; mso-tstyle-colband-size:0; mso-style-noshow:yes; mso-style-parent:””; mso-padding-alt:0in 5.4pt 0in 5.4pt; mso-para-margin:0in; mso-para-margin-bottom:.0001pt; mso-pagination:widow-orphan; font-size:10.0pt; font-family:”Times New Roman”; mso-ansi-language:#0400; mso-fareast-language:#0400; mso-bidi-language:#0400;} Toss cabbage in a large bowl with the carrots. In a bowl, whisk together the remaining ingredients. Pour the mixture over the cabbage and carrots and toss to coat thoroughly. Refrigerate until serving time.
Enjoy and have a great Labor Day Weekend!
