Strawberry-Shortcake Cookies

We had quite a few leftover strawberries after they were buy 1 get 1 free at the grocery store last week so I was looking up recipes to use them before they went bad.  I thought of Strawberry Shortcake because who doesn’t love that summertime dessert?  But then my friend Martha pinned this recipe the other day and I knew this is how I would use up our strawberries.Well, these cookies are just phenomenal – the cookie part is like a little sweet biscuit and then the sweet strawberries are throughout, all I can say is…YUM and they really do taste like a mini strawberry shortcake.

 

Strawberry Shortcake Cookies

12 oz strawberries, hulled and cut into 1/4-inch dice (2 cups)
1 Tsp fresh lemon juice
1/2 C plus 1 Tbs granulated sugar
2 C all-purpose flour
2 Tsp baking powder
1/2 Tsp coarse salt
3 oz (6 tablespoons) cold unsalted butter, cut into small pieces
2/3 C heavy cream (we used half and half, that’s all we had)
Sanding sugar, for sprinkling

Preheat oven to 375 degrees. Combine strawberries, lemon juice, and 2 tablespoons granulated sugar. Whisk together flour, baking powder, salt, and remaining 7 tablespoons granulated sugar in a large bowl. Cut in the butter with a pastry cutter, or rub in with your fingers, until mixture resembles coarse crumbs. Stir in cream until dough starts to come together, then stir in strawberry mixture.

Using a 1 1/2-inch ice cream scoop or a tablespoon, drop dough onto baking sheets lined with parchment, spacing evenly apart. Sprinkle with sanding sugar, and bake until golden brown, 24 to 25 minutes. Transfer to a wire rack, and let cool. Cookies are best served immediately, but can be stored in an airtight container at room temperature for up to 1 day.Enjoy!

Monday Outfit – on Vacation

We haven’t had much luck heading to the beach yet this weekend with all the rain and clouds, but we woke up this morning to bright beautiful skies, got on our bathing suits and headed to the beach. Here’s what I’m wearing, only my suit is the teal version of what is below. Have a great week!

We’re off to the beach this weekend – trying to make the most of summer before it’s over!  Here are a couple things I found this week I thought I would share…

Half and Half Pizza

There are few things in life I like to be “half and half”…

1. My iced tea – half tea, half lemonade.

2. Black and white cookies – half chocolate frosting, half vanilla frosting.

3. Pizza Toppings!  Sometimes it’s just too hard to decide on one pizza topping – the other night we couldn’t decide if wanted to make a ricotta pizza or a chicken fajita pizza (sauteed peppers and onions with chicken), so…we decided on half and half.  It was perfect, I had a slice of each.

Fall 2012 Pantone Outfit

To continue our chat about clothes for fall I thought I would share the Fall 2012 Pantone color palette just announced last week.  Thoughts?

I LOVE them!  I think Titanium is a great choice to pair with almost any of the rest.  I am already wearing Tangerine Tango and Olympian Blue, so I totally agree with those choices.

And, I definitely want a pair of pants in Ultramarine Green – they would be would be great for the fall with a little French Roast sweater (I love the one below with sparkle!) and maybe Honey Gold shoes for a pop.

Monday Outfit

I have exciting news to share – this will be my last Monday Outfit post as a full-time working mom!  I am taking a small step back from the full-time working world to work less to be with our sweet baby more, a decision I am so happy about!  Wait for next week’s post to see how Monday Outfits will transform…

Couple Things…

We have a family wedding to go to on Saturday and I can’t wait!  We all have lovely outfits planned – me in a 1-shoulder poppy colored dress, our baby girl in a beautiful red and blue flowered party dress, and my husband in Nantucket red pants and a navy blue blazer – are we going to look ultra preppy or what?  I’m definitely getting a family photo!

Fall 2012 Collections

I have mentioned before my love for fall clothes, right?  Well, I always look around designers fall collections for inspiration for “real person” shopping and I have to say I am loving the Nanette Lepore Fall, 2012 Collection.  I have always had a thing for ornate beading and, separately, sweater vests….so when I saw this:

I also think this leather jumper is something special – jewel colors are “in” for fall as well as leather everything.

Simple Summer Appetizer

So I mentioned we were having some friends over Saturday night for what turned into dinner inside thanks to the torrential downpours around here.  Anyway – we made the most delicious appetizer with some garlic scape pesto we had made a while ago and frozen.  This is a great appetizer idea for a summer gathering!

Bruschetta with Tomato and Basil

6 or 7 ripe plum tomatoes (about 1 1/2 lbs)
2 cloves garlic, minced (I omitted since we were eating with garlic-y garlic scape pesto)
1 Tbsp extra virgin olive oil
1 teaspoon balsamic vinegar
6-8 fresh basil leaves, chopped.
Salt and freshly ground black pepper to taste
1 baguette French bread or similar Italian bread
Olive oil

Prepare the tomatoes first. Parboil the tomatoes for one minute in boiling water that has just been removed from the burner. Drain. Using a sharp small knife, remove the skins of the tomatoes. (If the tomatoes are too hot, you can protect your finger tips by rubbing them with an ice cube between tomatoes.) Once the tomatoes are peeled, cut them in halves or quarters and remove the seeds and juice from their centers. Also cut out and discard the stem area. Why use plum tomatoes instead of regular tomatoes? The skins are much thicker and there are fewer seeds and less juice.

Chop up the tomatoes finely. Put tomatoes, garlic (again, I omitted the garlic), 1 Tbsp extra virgin olive oil, vinegar in a bowl and mix. Add the chopped basil. Add salt and pepper to taste.
Cut your bread into 1/2-inch slices, brush with a little olive oil, and toast under the broiler.  While the bread is still warm, spread a thin layer of the garlic scape pesto on the bread, then top with a spoonful of the tomatoes.

I hadn’t mentioned yet, but I found the perfect chambray shirt a few weeks ago at Nordstrom Rack – a style and color exactly what I was looking for, for a moderate price.  I am wearing it today with my favorite neon peach pants, bright nails, tan sandals similar to the ones below, and a dynamic flower necklace for a pop.  Enjoy your week!
