I bet by now the leftover stuffing and mashed potatoes are gone, the pies are done…but you still have some turkey hanging around, especially if you hosted Thanksgiving! Well, you can only eat so many turkey sammies and turkey pot pies, right? We make this enchilada recipe every year with leftover Thanksgiving turkey and it’s awesome. And SO simple.
Chop or shred your leftover turkey. Add to a frying pan and add 1 Tbs tomato paste, 1/4 C chicken stock, 1/2 Tsp chili powder and 1/2 Tsp cumin. Heat through.
In the meantime heat your marinara sauce and add spices: 1/4 Tsp cinnamon and 1/s Tsp chili powder.
Load your tortilla wraps with turkey.
Place seem side down in a baking pan and cover with the sauce. Sprinkle 1 C shredded cheddar cheese on top.
Bake at 400 degrees for about 10 minutes then leave under the broiler for about 5 minutes or desired crunchiness is achieved. We serve with black beans on the side…enjoy!
