We recently came into a lot of bacon so we needed a few recipe ideas other than “cook and eat.” We came upon this recipe from All Recipes for Bacon Roasted Chicken with Potatoes. It was obviously yummy (if it’s wrapped in bacon isn’t it a given) but we made a few edits that I think made it better.

Place bacon on top of split chicken breasts with the skin peeled off. |

Cut potatoes and onions. We also added green pepper for a little green (not pictured). |

Get your spices together – garlic powder, dried basil, pepper, dried chives, and adobo seasoning (paprika, cumin, chili powder, oregano). |

Sprinkle seasoning on chicken and veggies and bake at 400 degrees for one hour. Enjoy! |
