Breakfast Pizza

The perfect way to start 2012 is with a dynamite brunch…

A few weeks ago at our baby’s Christening Brunch, my husband ordered this amazing breakfast pizza with sausage, goat cheese, and a fried egg on top. It was so memorable and delicious (yes, I couldn’t resist trying a bite!) that we decided to re-make it for brunch this morning using our own interpretation. We served with coffee and spicy Bloody Mary’s!
Here’s what we did:

4 eggs, scrambled
3 strips of bacon cooked and crumbled
1/2 C shredded cheddar cheese
1/2 C shredded mozzarella cheese
1/2 tomato, diced
Pizza dough, we used 1/2 of a usual-sized ball of dough from the grocery store
Green onions, chopped
s&p to taste

Pre-heat oven to 450 degrees with pizza stone on bottom rack. Roll out pizza dough and cook for 10 mins. Take dough out of oven and top with bacon and eggs and then both cheeses. Cook for another 5-10 minutes. Take out of oven and sprinkle with green onions.
